Chocolate Avocado Pudding

Ingredients:

- 2 Avocados 

- 1/2 Cup Cocoa

- 1/2 Cup Maple Syrup

Procedure:

Throw all 3 ingredients into the blender and enjoy! For extra smiles, serve as suggested in the picture!

Banana Pancakes

Ingredients:

- 1 Banana

- 1 Cup Flour

- 1 Cup Plant Milk

I’m gonna have pancakes with a side of pancakes.

Procedure:

Throw all 3 ingredients into your blender and pancake away!

vegan chicken nuggets

Chiknless Nuggets

Ingredients:

- 1 Block Tofu

- 50 ml BBQ Sauce

- 1 Serve Quinoa

Preheat the oven to 180°C (350°F).

Cook the quinoa according to directions and then cool.

Dice the tofu and coat with BBQ sauce. Then, with the cooled quinoa, heat in the oven on a lightly greased cookie sheet for 15-20 minutes or until golden brown.

Vegan Waffles

Ingredients:

- 1 Cup Rolled Oats

- 1 Cup Plant-Based Milk

- 1 Tablespoon Vanilla Extract 

 

"Waffles are just pancakes with abs"

Procedure:

Place all 3 ingredients into the blender and blend until the batter is runny. 

Preheat your waffle iron and let the waffle batter thicken until the iron is ready. 

Cook the waffles on your iron.

This recipe will give you 2-3 well sized waffles (also depends on the size of your iron). 
Serve with your favorite toppings!

Note: Toppings may include maple syrup, agave, jam, corn syrup or vegan chocolate spread. You're only limited by you imagination!

Peanut Butter Strawberry Smoothie

Ingredients:

- 1 Cup Frozen Strawberries

- 1 Large Banana (Sliced)

- 2 Tablespoons of Peanut Butter

Procedure:

Throw all 3 ingredients into the blender. Add half a cup of water (or even better- Plant-Based Milk!). Blend for 20-30 seconds. Enjoy!

three ingredient chia pudding

Chia Seed Pudding

Ingredients:

- 1 Can Coconut Milk

- 1/4 Cup Chia Seeds

- 1 Tablespoon Agave

"Chia seeds are the meaning of life"

Procedure:

Mix them all together and pour into mason jars or an airtight container. Let it sit in the refrigerator overnight and enjoy it the next day topped with any fruit or nuts preferred.

vegan vegetable soup recipes

Pea Soup

Ingredients:

- 1 Tbsp Olive Oil

- 1 Finely Chopped Medium Onion

- 1.5 lbs Green Peas

Procedure

Heat the Olive Oil in a large pan over a medium heat.

Add the onion, cover and cook until translucent- about 5 minutes.

Add the peas and poor in enough water to just cover them.

Cover and simmer for 10 minutes.

Blend, season with salt and pepper if desired and serve.

Note: For additional flavor, add crushed garlic.

vegan black bean chili

Vegan Chili

Ingredients:

- 1 Can/Cup Diced Tomatoes

- 1 Can Black Beans

- 2 Tbsp Chili Powder

Procedure:

Add all ingredients to a large pot and heat on medium.

Allow to simmer for around 20 minutes.

It gets better the longer it sits. 

Note: Feel free to add some ground Cumin and grated ginger for that extra edge!

vegan party snacks

Kale Chips

Ingredients:

- 1 Large Bunch of Kale

- 2 Tbsp Coconut Oil

- Salt & Pepper to Taste

Procedure:

Preheat the oven to 150°C (300°F).

Separate the leaves from the stalk and cut into bite sized pieces. Evenly coat the kale with the coconut oil (can also use a spritzer).

Distribute the coated kale on an oven trey, sprinkle salt and pepper. 

Heat for 20-30 minutes and enjoy!

Cauliflower Couscous

Ingredients:

- 1 Head Cauliflower, Any Size

- 1 Sprig Rosemary

- 1 Tbsp Sea Salt

Place cauliflower florets into a food processor. 

Pulse several times until the cauliflower looks like a coarse meal, resembling traditional couscous.

Cover the bottom of a large sauté pan with a thin layer of water. 

Add salt and an aromatic herb such as rosemary, if using. Bring to a simmer, stir. 

Add the ground cauliflower to the pot, spreading it out in an even layer. Bring to a simmer, then reduce heat to the lowest possible simmer setting. 

Cover the pan and cook/steam for 5 minutes. 

Remove from heat. 

Remove cauliflower to a sheet pat to cool. ENJOY!

Coconut Curry Lentils

Ingredients:

- 1 Cup Yellow Lentils

- 1 Can Coconut Cream

- 3 Tablespoons Curry Powder

Procedure:

- Add two cups of water to a pot and then heat on medium until the water starts simmering. 
- Add the can of coconut cream and curry powder.
- Stir until all is assimilated. Then, add the lentils and stir for a few seconds.
- Place lid on pot and let leave it on medium/high for 20-25 minutes. 
- Serve hot and enjoy!

Note: If you have the spare ingredients, you can also add chopped onions, crushed garlic, chopped carrots and green peas.
